Italian roast turkey recipe details
Italian seasoning and classic Mediterranean citrus flavors this Thanksgiving turkey.

Ingredients
Serves: 14- 1 (14 to 16 pound) turkey
- 1/4 cup olive oil, at room temperature
- 2 tablespoons Italian seasoning
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 large onion, quartered
- 1 lemon, quartered
- 1 orange, quartered
- 3 fresh rosemary sprigs
- 3 fresh sage sprigs
- 3 cups chicken broth
- 1/4 cup flour
Preparation method
Prep: 20 mins | Cook: 3 hours1. Preheat oven to 325 degrees F.
2. Stir Italian seasoning into the olive oil, then rub under and over turkey skin on the breast and over the rest of the bird. Sprinkle the cavity with salt and pepper, then stuff the turkey with onion, lemon, orange, rosemary, and sage.
3. Tie closed with kitchen string and set in a roasting pan. Add 2 cups broth to the roasting pan.
4. Roast for 2 3/4 to 3 1/4 hours, until the turkey reaches an internal temperature of 165 degrees F at its deepest point. Remove from oven, tent loosely with foil, and let rest for 20 minutes.
5. Pour cooking juices into a saucepan and set over medium-high heat. In a separate bowl, whisk 1 cup chicken broth with flour. When cooking juices come to a boil, add the chicken broth mixture. Cook for 2 minutes to thicken.
6. Carve turkey and serve with thickened cooking juices.
