Ingredients

1 medium onion, chopped
1 medium chili, chopped
75 ml white wine
75 ml stock, lamb or vegetable
2  tomatoes, chopped
2 clove(s) garlic, finely sliced
2 tbsp marjoram, chopped
2 tbsp parsley, chopped
2 tbsp dill, chopped
½ cup(s) fresh or frozen peas, or mixture with sugar snaps and mange tout
½ cup(s) Pecorino cheese, grated
800 g lamb fillets, sliced
400 g spaghetti
flour
salt and pepper, to taste
olive oil

Instructions

Dust the lamb strips in seasoned flour, in a medium pan add oil and brown the meat on all sides. Take out and place aside.

In the same pan if necessary add extra oil, add onion, garlic and chili and cook till transparent, then add the white wine. Cook and reduce the wine by half in usually 3 minutes, then add lamb, stock and tomatoes. Cook on very low heat for 20 to 25 minutes.

While the lamb sauce is cooking, boil water for the pasta and cook for 13 minutes. 5 Minutes before the end of lamb cooking add the herbs and peas. When the pasta is cooked and the lamb sauce is ready, serve sprinkled with the cheese.
