Italian chicken burgers with lemon avocado spread recipe details
When red meat isn’t an option, flavor still can be. These chicken burgers, with fresh mozzarella, avocado, a hint of Worcestershire, and much more, are chock-full of it.

Ingredients
Serves: 4- 1 tablespoon lemon juice
- 1/4 teaspoon Worcestershire sauce
- 1/2 medium ripe avocado, peeled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 4 green onions, coarsely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons prepared pesto
- 3 garlic cloves, minced
- 1/4 teaspoon salt
- 1 pound ground chicken
- 1/4 cup olive oil
- 1/2 pound fresh mozzarella cheese, cut into 4 slices
- 4 slices Italian bread
- 2 cups fresh arugula
- 8 slices tomato
- 1/4 teaspoon dried basil
- 1/ teaspoon cayenne pepper
Preparation method
Prep: 30 mins | Cook: 15 mins1. To make the spread, combine lemon juice, Worcestershire, avocado, mayo, sour cream, onions, salt, and cayenne in food processor and pulse to combine. Pour into bowl and refrigerate.
2. Stir together the cheese, pesto, garlic, and salt in a mixing bowl. Then incorporate the chicken and make 4 patties from the mixture.
3. Heat 2 tablespoons oil in skillet over medium heat. Add burgers to hot oil and cook for about 7 minutes on each side, until chicken burgers are firm, their internal temperature will have reached 160 degrees F. Cover each patty with cheese and cook until cheese has melted.
4. While burgers are cooking, coat each slice of bread with oil and broil on a baking sheet for about 2 minutes on each side to toast.
5. Spread toast liberally with avocado spread, then place the arugula, burgers, and tomato on each slice. Garnish with basil and black pepper.
