Island Delight Creme Cake recipe
- Ingredients:
- 1 angel food cake, either torn in pieces or sliced in 1/2-inch thick slices
- 2 packages Knoxunflavored gelatin
- 1/4 cup very cold water
- 1 cup boiling water
- One #2 can crushed pineapple with juice
- 1/2 teaspoon salt
- 1 cup sugar
- 2 teaspoons lemon juice
- 4 packages Dream Whipor 1 carton Cool Whip whipped topping>Note: Cool Whipworks just as well. Do not try to use real whipped cream as it is not dense enough to hold up.
Instructions:
Dissolve gelatin in cold water, stir, then add boiling water; set aside. In a glass bowl, combine the pineapple, sugar, salt, and lemon juice. Add the gelatin and mix well. Chill mixture until it is the consistency of unbeaten egg whites. If using Dream Whip, prepare 2 packages as per instructions on box. Fold the whipped topping into the gelatin mixture.
Place a layer of angel cake in a springform pan and cover with mixture. Layer, alternating with cake and mixture, finishing with mixture. Note: You can increase the size of your cake by adding a band of foil around the rim of your pan. If you do not have a springform pan, choose a serving platter and make a form with aluminum foil, using transparent tape to anchor it to the plate. In this way, you can make as large and high a cake as you wish.
Cover with plastic wrap and refrigerate overnight. Whip the additional 2 packages of Dream Whip.Unmold your cake and cover with the whipped topping. You may sprinkle with coconut of decorate with flowers, or just be creative.
