Irish tea bread recipe details
Ingredients
500 g | sultanas or mixed dried fruit |
400 ml | boiling water |
3 | tea bags |
200 g | muscovado sugar |
250 g | self-raising flour |
1 large | egg, beaten |
½ tsp | mixed spice |
Instructions
Brew the tea, it needs to be quite strong, in a heat resistant bowl. Allow to brew for 4-5 minutes, remove the tea bags and add the fruit. Allow to soak for at least 2 hours, but the longer the better, preferably overnight.Preheat oven to Gas Mark 4, 180°C, 350°F. Grease and line a 2lb, 900g loaf tin.
In a bowl mix the sugar, egg and the spice. Add to the fruit mixture (without draining). Mix in the flour. Pour or spoon into tin and bake for 1½ hours or until a skewer inserted into the centre comes out clean.
Allow to cool in tin for several minutes and the turn out onto a wire rack to cool completely.
When cold, slice to serve.
