Ingredients

75 ml water
12 tbsp caster sugar
55 g cocoa powder
55 g dark chocolate, chopped
½ tsp vanilla extract
mint springs, to garnish
4 drop(s) peppermint extract

Instructions

In a saucepan bring the water with the sugar to a boil and cook until the sugar has dissolved. Remove the saucepan from the heat and add to the syrup cocoa powder, chocolate, vanilla extract and the peppermint extract. Mix well.

Allow to cool down, then refrigerate for 4 hours. Pour the mixture into an ice cream maker and freeze for 60 minutes or until granulated.

Serve garnished with mint leaves.
