Ingredients
60 ml | Bailey’s Irish Cream |
500 g | mascarpone cheese |
60 g | brown sugar |
40 g | granulated sugar |
24 | Ladyfingers |
2 tsp | cocoa powder |
400 ml | freshly brewed espresso or coffee |
Instructions
Make coffee and transfer to a shallow dish. Add 2 tablespoons Irish Cream. Set aside and allow to cool.In a large bowl, combine Mascarpone, sugars and remaining Irish Cream. Beat at high speed until smooth.
Briefly dip flat side of ladyfinger halves in coffee mixture and arrange in a shallow dish. .
Spread half of cream cheese mixture over ladyfingers and sprinkle with half of the cocoa powder.
Repeat procedure with remaining ladyfinger, cream cheese mixture, and cocoa powder.
Chill for 4 hours before serving.
