Creamy coconut noodles with plum compote recipe details
Ingredients
For the noodles: | |
400 ml | coconut milk |
600 ml | milk |
2 tbsp | liquid honey |
1 tbsp | sugar |
300 g | noodles (spirals) |
For the compote: | |
600 g | plums |
30 g | sugar |
½ stick(s) | cinnamon |
125 ml | apple juice |
Instructions
In a saucepan mix the coconut milk, milk, honey and sugar. Bring to the boil then add the noodles. Cook over low to medium heat until the noodles are done and the mixture slightly creamy.In the meantime, wash, halve and pit the plums. In a separate saucepan bring the apple juice with the plums, sugar and cinnamon to the boil. Simmer over low heat for approximately 2 minutes. Cool, then fish out the cinnamon stick.
Serve the noodles with the plum compote in dessert bowls.
