Irish Christmas Cookies recipe
Ingredients
200 g | butter |
200 g | dark chocolate |
150 g | ground walnuts |
160 g | flour |
6 | eggs |
200 g | icing sugar |
100 g | granulated sugar |
2 tsp | cinnamon |
cocoa powder, to garnish |
Instructions
Chop and melt the chocolate. In a bowl stir together the nuts, cinnamon and flour then set aside. Separate the eggs.
Beat the butter with half of the icing sugar until creamy. Whisk in the egg yolks then gently pour in the melted chocolate, stirring constantly. Finally add the nut and flour mixture. Mix until well combined.
Preheat the oven to 200°C.
Whisk the egg whites with the granulated sugar until stiff. Fold the beaten egg white into the batter.
On a lined baking tray evenly divide the batter and bake for 20 minutes.
Allow to cool, then cut the cake into squares. Prepare a frosting of the remaining icing sugar and some drops of water. Brush the frosting on top of the cookies. Dust with cocoa powder.
