Indian Spicy Vegetable Curry recipe

Ingredients
600 g | potatoes, peeled and diced |
500 g | broccoli, in small florets |
1 | courgette, sliced |
1 | onion, chopped |
1 | red chili pepper, chopped |
30 g | almond flakes, toasted |
400 ml | coconut milk |
2 tsp | garam masala |
1 tsp | ground turmeric |
1 tsp | green curry paste |
1 clove(s) | garlic, minced |
salt and pepper | |
1 | red bell pepper, diced |
Instructions
Cook the potatoes in salted water until nearly done. Add he broccoli and cook for 2 more minutes. Drain.
In a large saucepan, heat the oil. Fry the courgette and the potatoes for 3-4 minutes. Add the garlic, chili, onion, broccoli and bell pepper. Stir in the curry paste and cook until fragrant. Pour in the coconut milk and bring to a boil. Season to taste with salt, pepper, turmeric and garam masala and cook for some more minutes.
Serve sprinkled with almond flakes.
