|600 g||potatoes, peeled and diced|
|500 g||broccoli, in small florets|
|1||red chili pepper, chopped|
|30 g||almond flakes, toasted|
|400 ml||coconut milk|
|2 tsp||garam masala|
|1 tsp||ground turmeric|
|1 tsp||green curry paste|
|1 clove(s)||garlic, minced|
|salt and pepper|
|1||red bell pepper, diced|
InstructionsCook the potatoes in salted water until nearly done. Add he broccoli and cook for 2 more minutes. Drain.
In a large saucepan, heat the oil. Fry the courgette and the potatoes for 3-4 minutes. Add the garlic, chili, onion, broccoli and bell pepper. Stir in the curry paste and cook until fragrant. Pour in the coconut milk and bring to a boil. Season to taste with salt, pepper, turmeric and garam masala and cook for some more minutes.
Serve sprinkled with almond flakes.
