Hunter s toast recipe details
Ingredients
8 slice(s) | toast |
300 g | venison, sliced, leftovers from a roast |
200 g | calf’s liver, sliced, cooked, leftovers |
1 small | Périgord truffle, finely chopped |
2 tbsp | red wine |
some | salt and pepper |
1 tbsp | flour |
2 tbsp | butter |
4 | hard boiled eggs, sliced |
¼ cup(s) | water |
Instructions
Preheat the oven to 180°C.Press the toast slices into buttered tartlet tins, folding the edges upward. Bake until golden and crispy. Allow to cool and remove from the tins.
Transfer the venison and the liver into a blender and process until smooth.
In a saucepan, heat the butter. Stir in the flour and cook over low heat for 2 minutes. Pour in the water and cook until thickened, stirring constantly. Reduce the heat. Add the venison and liver puree and the truffle. Season to taste with wine, salt and pepper and cook the mixture over low heat for 5 minutes.
Spread the toasts with the mixture. Serve garnished with egg.
