Honey lemon chicken with potatoes and carrots recipe details
Ingredients
1 | chicken, jointed into 8 pieces |
1 | lemon, sliced |
250 g | carrots, sliced |
500 g | potatoes, peeled and sliced |
salt and freshly ground black pepper | |
4 tbsp | oil |
1 tsp | thyme, chopped |
250 ml | chicken stock |
2 tbsp | honey |
1 | lemon, grated peel |
Instructions
Preheat the oven to 180°C. Divide the potatoes, carrots and the chicken pieces in a deep baking tray. Season with salt and pepper. Add the thyme and 3 tablespoons of the oil and mix well. Turn the chicken pieces to skin side up. Bake for 15 minutes.Pour in the stock and bake for another 15 minutes. Mix together the lemon zest, the remaining oil and the honey. Brush the chicken skin with the mixture. Bake for another 15 more minutes or until the chicken pieces are golden and crispy.
Serve with fresh lettuce salad.
