Homemade ravioli with salmon filling recipe details
Ingredients
1 | portion of my pasta dough, see database |
350 g | fresh salmon |
350 ml | whipping cream |
some | lemon juice |
salt | |
pepper | |
1 | egg, white only |
Instructions
Blend the salmon, whipping cream, salt pepper and lemon juice well. Roll out the pasta dough thinly and cut stripes approximately 10 cm wide and brush it with some egg white (egg wash).Put 1 tsp of salmon filling on the lower side of the dough, approx 5-6 cm apart and fold upper side down over the filling and press air out. Cut squares. Put them on a kitchen towel sprinkled with flour. Or you can freeze them now.
Cook in salt water for approximately 4-6 minutes. You could also use any of the different tools to make ravioli. I used a plastic non stick dumpling maker.
