Ingredients
80 ml | extra virgin olive oil |
100 g | fresh herbs leaves: |
cilantro | |
basil | |
parsley | |
mint |
Instructions
Blanch herbs in boiling water. Wash under cold water and pat dry.Put blanched herbs in a blender. Add oil and process until mixture is creamy. Pour into a decorative airtight jar and shake well. Refrigerate for at least 12 hours
Let mixture come to room temperature, then pour through a strainer lined with five or six layers of damp cheesecloth; do not press down on solids.
Keep oil covered and refrigerated.
