Pump up the flavor of this easy layered pot pie by stirring onions and shredded cheese into the cornbread crust. Don’t worry, the cornbread will cook all the way through and it will not be soggy at all, trust me.

Ingredients
Serves: 8- 2 cooked chicken breasts, cubed
- 1 can cream of chicken soup
- 1/2 cup water
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can peas, drained
- 1 potato, cooked and cubed
- 2 packages corn bread mix, prepared as directed on the package
- 1/2 onion, diced (optional)
- 1 cup shredded cheddar cheese (optional)
Preparation method
Prep: 15 mins | Cook: 40 mins1. Pre-heat oven to 350 degrees.
2. Place the chopped chicken breast into a skillet with the cream of chicken soup and water over medium-high heat. Stir in the corn, peas, and cubed cooked potatoes or other veggies, if so desired. Cook, stirring occasionally until the mixture is bubbling hot.
3. While the chicken and vegetable filling is cooking, prepare your corn bread as directed on the package. Mix the diced onion and 2 cups of cheese in your corn bread, and let stand for 5 minutes.
4. Pour the chicken and vegetable filling into a baking dish, cover with the cornbread batter and let bake in oven until the cornbread is cooked through, about 30 minutes.Cook Information Cleanup:
