Home smoked duck breast recipe details
Ingredients
2 | duck breasts, large (male) |
3 tbsp | smoke wood chips |
3 tbsp | dried cranberries |
40 g | sugar |
100 ml | white wine |
1 dash(es) | grenadine |
1 dash(es) | lemon juice |
4 handful | lamb’s lettuce |
4 tbsp | apple vinegar |
4 tbsp | rapeseed oil |
1 small | apple |
salt and pepper | |

Instructions
Carve the skin of the duck breasts with a sharp knife to create a diamond pattern, but take care not to cut into the flesh. Place the duck breasts skin side down in a cold pan with oil and switch the heat to medium. Fry until the skin side has released most of the fat and is golden and crispy. Turn the breasts around and fry on the meat side for approximately 4 minutes.Line the bottom of a steam pot with aluminium foil. Place the smoke wood chips onto the foil. Put the top pan or a steamer basket with the duck breasts over the pot and cover with a lid. When it starts to smoke, switch down the heat to low-medium and leave the duck breasts for 15-20 minutes in the smoke.
In a saucepan caramelise the sugar. Deglaze with the white wine and add a dash of Grenadine for a nice red colour. Bring to a boil and add the cranberries. Boil down a bit and, if too sweet, season to taste with lemon juice.
In a bowl whisk the vinegar with salt, sugar and pepper until salt and sugar are dissolved. Whisk in the oil. Peel, core and dice the apple into small pieces. Combine with the dressing. Add the lambís lettuce to the dressing and toss gently.
To serve:
Season the duck breasts with salt and pepper and carve the meat into slices. Arrange the salad in the middle of the plates. Place the duck breast slices fan-shaped next to the salad. Sprinkle the meat with cranberries.
