Herbed pork roast with potatoes recipe details
A lightly seasoned pork roast goes into a Dutch oven with potatoes. What comes out? Only an amazing pot of pure deliciousness. You could also make this over hot coals out camping, or outside on your grill.

Ingredients
Serves: 8- 4 teaspoons olive oil
- 3 tablespoons minced fresh rosemary
- 2 tablespoons minced fresh marjoram
- 8 garlic cloves, minced
- 4 teaspoons minced fresh sage
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 (3 pound) boneless whole pork loin roast
- 4 pounds red potatoes, quartered
Preparation method
Prep: 20 mins | Cook: 1 hour 30 mins1. Preheat oven to 350 degrees F.
2. Whisk 3 teaspoons olive oil with rosemary, marjoram, garlic, sage, salt, and pepper in a bowl. Use 2 tablespoons of the mixture to season the pork loin well.
3. In a mixing bowl, toss the potatoes with the rest of the herb mixture.
4. Place a large Dutch oven on the stove over medium-high heat. Pour remaining 1 teaspoon oil into the pot. Add pork loin and sear on all sides, turning and cooking until the loin is browned.
5. Pour potatoes into the pan to surround the loin. Insert a meat thermometer into the deepest part of the pork.
6. Close lid on the Dutch oven and place in the oven. Bake for 1 1/2 to 2 hours, until the pork reaches 160 degrees F; remove from oven and let the meat rest for 10 minutes. Slice and serve with potatoes.
