Herb Omelette with Chicken and Bell Pepper recipe
Ingredients
2 | eggs |
salt and freshly ground black pepper | |
1 tbsp | mixed herbs |
1 tsp | oil |
80 g | chicken breast fillet, cooked and sliced |
1 | red bell pepper, seeded and thinly sliced |
Instructions
Break the eggs into a bowl and whisk in the herbs. Season with salt and pepper.
In a pan, heat the oil. Add the eggs and over medium heat until nearly set. Turn over gently and cook for some more seconds, then slide the omelette onto a warmed plate.
Top with the chicken slices and the bell peppers and serve immediately.
