Herb baked eggs recipe details
- Ingredients
- 5 eggs
- 1 teaspoon Dijon mustard
- 1/4 cup plain non-fat yogurt
- 3/4 cup shredded sharp cheddar cheese
- 2 teaspoons fresh chives, chopped
- 2 teaspoons fresh dill, chopped
Preheat oven to 375 degrees. Spray four 4-ounce ramekins with cooking spray. In a medium-size bowl, whisk together eggs, mustard, and yogurt. Stir 1/4 cup cheese and herbs into mixture. Spoon mixture into ramekins. Sprinkle with remaining cheese. Bake in preheated oven 25 to 30 minutes or until puffed and set.
Note:Do not substitute dried herbs for the fresh in this recipe. You may use other fresh herbs like basil, thyme, or parsley.
