Hearty stuffed rolled pork roast recipe details
Ingredients
500 g | carrots, sliced |
salt and freshly ground black pepper | |
3 | onions, chopped |
150 g | peas, frozen |
2 sprig(s) | thyme, chopped |
½ bunch(es) | parsley, chopped |
125 g | cooked ham, diced |
2 | frying sausages |
1 ½ kg | rolled pork roast, shoulder or belly, skin off |
4 tbsp | oil |
2 tbsp | tomato puree |
250 ml | red wine |
500 ml | vegetable stock |
6 | tomatoes, peeled and diced |
Instructions
Pour boiling water over the peas. Drain after 3 minutes. Unroll the meat. Peel the sausages. Mix the sausage meat with the ham and the herbs until well combined. Spread the meat with the mixture. Sprinkle with the peas. Roll up and secure tightly with kitchen string. Season with salt and pepper.In a large saucepan heat the oil. Fry the meat until golden browned all around. Remove from the pan and set aside. Sauté the carrots and the onions for some minutes. Season with salt and pepper. Add the tomato purée and stir-fry for a minute. Deglaze with the wine and the stock. Bring to a boil. Return the roast, cover and braise over low heat for 60-90 minutes or until the meat is tender.
Add the tomatoes and cook for 10 more minutes.
Carve the meat into slices and serve with the sauce and vegetables and crispy fried potatoes.
