Stuffed pork escalopes recipe details

125 g mozzarella, diced |
80 g sun-dried tomatoes in oil, diced |
8 pork escalopes, thin cut |
100 g green pesto |
salt and freshly ground black pepper |
3 tbsp olive oil |
100 ml dry white wine |
150 g yoghurt |
2 tsp white wine vinegar |
1 head(s) lettuce |
1 yellow bell pepper, diced |
200 ml vegetable stock |
Instructions
Escalope
Spread some pesto onto each escalope. Divide the tomatoes and Mozzarella on top. Roll up the escalopes and tighten with a toothpick. Season all around with salt and pepper.
In a pan heat 2 tablespoons of the oil. Fry the escalopes over high heat until golden all around. Pour in the stock and the wine and bring to a boil. Cover and braise over low heat for 10 minutes.
Salad / dressing
Mix together the yoghurt, 2 tablespoons of water, the vinegar and 1 tablespoon of oil. Season to taste with salt and pepper. In a bowl, combine the lettuce and the bell pepper. Drizzle with the yoghurt dressing.
Put everything together
Take the escalopes out of the pan and keep warm. Stir the remaining pesto into the sauce and season to taste with salt and pepper. Pour the sauce over the escalopes and serve together with the salad.

In your description of the recipe it states “a flavourful stuffing mixture of herbs, breadcrumbs and cheese” but nowhere in the list of ingredients does it say breadcrumbs.
Thank you for point it out. Breadcrumbs are not included in this recipe. Breadcrumbs can be used with classic recipe where flours, breadcrumbs and eggs form a coating for frying the escalope.
