Ingredients
125 g | mozzarella, diced |
80 g | sun-dried tomatoes in oil, diced |
8 | pork escalopes, thin cut |
100 g | green pesto |
salt and freshly ground black pepper | |
3 tbsp | olive oil |
100 ml | dry white wine |
150 g | yoghurt |
2 tsp | white wine vinegar |
1 head(s) | lettuce |
1 | yellow bell pepper, diced |
200 ml | vegetable stock |
Instructions
Spread some pesto onto each escalope. Divide the tomatoes and Mozzarella on top. Roll up the escalopes and tighten with a toothpick. Season all around with salt and pepper.In a pan heat 2 tablespoons of the oil. Fry the escalopes over high heat until golden all around. Pour in the stock and the wine and bring to a boil. Cover and braise over low heat for 10 minutes.
Mix together the yoghurt, 2 tablespoons of water, the vinegar and 1 tablespoon of oil. Season to taste with salt and pepper. In a bowl, combine the lettuce and the bell pepper. Drizzle with the yoghurt dressing.
Take the escalopes out of the pan and keep warm. Stir the remaining pesto into the sauce and season to taste with salt and pepper. Pour the sauce over the escalopes and serve together with the salad.
