Hearty pancake tart recipe details
Ingredients
1 | onion, chopped |
salt and freshly ground black pepper | |
½ bunch(es) | parsley, chopped |
1 can(s) | tomatoes, peeled and chopped |
200 g | cooked ham |
200 g | freshly grated Cheddar cheese |
1 tbsp | oil |
1 tbsp | flour |
1 tbsp | tomato puree |
1 pinch(es) | sugar |
4 | pancakes, leftovers or freshly made |
Instructions
In a pan heat the oil. Sauté the onion until lucent. Dust with the flour and cook stirring until slightly browned. Stir in the tomato purée and cook for another 30 seconds. Add the canned tomatoes and bring to a boil. Simmer for 5 minutes. Season to taste with salt, pepper and sugar. Stir in the parsley.Cut the ham into strips.
Place 1 pancake onto a baking tray. Spread with 1/4 of the sauce and sprinkle with 1/3 of the ham and 1/4 of the cheese. Cover with a second pancake and repeat the procedure until all is used up, finishing with sauce and cheese. Bake in the preheated oven at 200°C for 20 minutes.
With a sharp knife, cut into pie pieces and serve with fresh green salad.
