Harvest pancakes recipe details
- Ingredients:
- 1 cup flour
- 1 cup wheat flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking powder
- 1 Tablespoon sugar
- 1/2 teaspoon cinnamon
- 1-1/2 cups buttermilk
- 1/2 teaspoon baking soda
- 1 egg, well beaten
- 1 Tablespoon butter, melted
- 1 cup grated tart apple
- 1/2 cup chopped pecans

Mix together flours, salt, baking powder, sugar, and cinnamon in a large bowl. Stir to blend. Combine buttermilk with baking soda in a medium bowl; add egg and butter and mix well. Add to flour mixture; stir quickly to blend. Fold apple and pecans into mixture.
Pour pancakes, approximately 3 inches in size, onto greased hot griddle and fry until brown on both sides. Serve with warm maple syrup.
Makes: 8 to 12 pancakes.
