- Ingredients
- 2 beaten eggs
- 1 Tablespoon water
- 1 teaspoon Masala mix*
- 1 Tablespoon butter
- 1 fresh tomato, cut into 1/2-inch slices
- grated Parmesan cheese
- lemon pepper seasoning
- parsley
- Asian chili sauce (optionally diluted with a light tomato sauce)
Combine eggs, water, and Masalamix and cook in a buttered frying pan as scrambled eggs or an omelet. Cover tomatoes with cheese and broil in the oven for a few minutes until done. Sprinkle cooked tomatoes with lemon pepper and service with eggs. Garnish with parsley and chili sauce mixture.
