Gujarati indian eggs with broiled tomato recipe details
Ingredients
- 2 beaten eggs
- 1 Tablespoon water
- 1 teaspoon Masala mix (details on how to make your own masala are below the recipe)
- 1 Tablespoon butter
- 1 fresh tomato, cut into 1/2-inch slices
- grated Parmesan cheese
- lemon pepper seasoning
- parsley
- Asian chili sauce (optionally diluted with a light tomato sauce)
Instructions:
Combine eggs, water, and Masala mix and cook in a buttered frying pan as scrambled eggs or an omelet.
Cover tomatoes with cheese and broil in the oven for a few minutes until done.
Sprinkle cooked tomatoes with lemon pepper and service with eggs.
Garnish with parsley and chili sauce mixture.
Tip: Masala can be purchased at gourmet stores or you can mix your own version. Masala mix will contain: equal parts ground coriander, cumin, turmeric, mild chili powder, and 3 parts mild curry powder. We also have a recipe for masala mix here.
