Grouper with eggplant sauce recipe details
Ingredients
4 | grouper fillets, 225g each |
1 | lime, quartered |
50 g | all – purpose flour |
200 g | eggplant, diced |
1 | tomato, diced |
100 g | okra, cooked and chopped |
½ tsp | red hot sauce |
40 g | canned tomatoes, crushed |
1 clove(s) | garlic, minced |
60 g | butter, melted |
75 g | onion(s), diced |
½ tsp | black pepper, freshly ground |
1 tsp | oregano, dried |
80 g | bell pepper, diced |
60 ml | water |
1 dash(es) | cayenne pepper |
some | red pepper flakes |
some | salt |
some | white pepper |
Instructions
In a large sauce pan add 2 tbsp of butter, garlic, onion, egg plant, tomato and bell pepper.Sauté on medium heat for 8 minutes until vegetables are soft. Add in seasonings, okra, water and crushed tomatoes and bring to a simmer for 5 minutes on low heat. Stir frequently, set aside.
Heat a large skillet and add 2 tbsp butter. Dredge fish fillets lightly in flour and place in skillet. Cook fillets on medium heat, 7 minutes on each side.
Place fillets on serving plates and spoon egg plant sauce over the top. Garnish with lime wedges.
Serving suggestion:Serve on rice or with baguette
