Ground beef chilaquiles recipe details
Beef, spices and tortilla chips in an easy casserole.Ready in: 45 mins
Serves: 4
Ingredients
- 1 pound ground round
- 1 cup salsa
- 1/4 cup chili powder
- 1 teaspoon dried oregano
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 (16 ounce) can crushed tomatoes
- 1-1/2 cups chicken stock
- 1/4 pound white corn tortilla chips, coarsely broken, about 2 cups
- 1 cup Cheddar cheese, optional, shredded
Preparation method
Prep: 15 mins | Cook: 30 minsPreheat oven to 325 degrees F (165 degrees C).
Heat a heavy saucepan over medium high heat. Saute beef, onion and garlic 6 minutes, breaking meat into bits, until browned and onion is tender.
Stir in next 5 ingredients and salt to taste.
Bring to a boil over medium heat, mixing thoroughly.
Reduce heat to medium low. Cover and simmer about 10 minutes, stirring occasionally.
Stir in tortilla chips.
Transfer mixture to an oven-proof casserole.
Sprinkle with cheese.
3. Bake 10 minutes or until cheese is melted. Serve with salsa.

Nice and just about the right amount of heat, although I would prefer to be more spicy. But hey, you can always add more spiciness (it is a little bit more difficult to reduce the spiciness 🙂 ). I’ve made the recipe and used corn tortillas. I recommend a good beer to go along with this.
I wouldn’t say no to beer either.
