Here’s the thing: Grilling a whole turkey is hard. You need a huge grill, high enough for the lid to fit over the bird, wide enough to set up for indirect heat. But you want that grilled flavor, we know. So here’s a compromise: Cut the bird into pieces and follow this recipe. Smoky flavor, terrific turkey.

Ingredients
Serves: 10- 1 (12 to 14 pound) turkey, at room temperature
- Olive oil
- Salt and pepper
Preparation method
Prep: 20 mins | Cook: 1 hour 15 mins1. Preheat grill to high and oil the grate.
2. Cut bird into pieces: 2 breasts, leg quarters, and wings. Coat with olive oil and sprinkle with salt and pepper.
3. Set breast pieces on the grill, turn heat down to low, and close the lid. Cook for about 30 minutes, flipping once midway through cooking time.
4. Set leg quarters and wings on the grill next to the breast pieces. Close lid again and cook for another 45 minutes, flipping every 15 minutes, until turkey thighs reach an internal temperature of 160 degrees F.
5. Remove turkey from grill and let stand for 15 minutes. Carve and serve.
