Grilled Tournedos with Red Wine Sauce recipe

Ingredients
6 | tournedos of beef |
300 ml | heavy red wine |
100 ml | olive oil |
4 tbsp | soy sauce |
4 tbsp | oyster sauce |
1 small | red chili, seeded and finely diced |
1 clove(s) | garlic, minced |
1 ½ tsp | dried oregano |
100 g | butter |
2 tbsp | shallots, finely chopped |
2 tbsp | scallions, finely chopped |
1 tsp | freshly ground white pepper |
Instructions
In a saucepan, heat the wine with oil, soy sauce and oyster sauce, chilies, garlic and oregano. Bring to a boil. Remove the marinade from the heat and set aside to cool down for 1 hour.
In a baking dish, cover the steaks with the marinade and allow to marinate in the fridge for 6 hours or overnight, turning occasionally.
In a bowl, mix together the butter and one teaspoon of the red wine. Add the shallots, scallions and 1 teaspoon of pepper. Cover and set aside in the fridge.
Preheat the oven to 110°C and the grill or barbecue.
Grill the marinated steaks from both sides to your taste. Approximately 1 minute for each side rare, 2 minutes medium, 3 minutes well done.
Place the grilled steaks in a clean baking dish. Pour the butter over the steaks. Bake for 1 minute until the butter starts to melt and serve immediately.
