Grilled Chicken with Homemade Hot Sauce

Marinated chicken breasts hot off the grill are topped with a tangy hot sauce made from scratch that’s sure to impress. Grill up zucchini or tomatoes to go with it and call it dinner!

Ingredients
Serves: 2- 1/2 cup + 1 tablespoon olive oil
- 1/4 cup lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano, to taste
- 2 boneless skinless chicken breasts
- 1/4 cup chopped onion
- 1 clove garlic
- 1/3 cup minced tomatoes
- 2 teaspoons seeded, finely chopped jalapeno pepper
Preparation method
Prep: 5 mins | Cook: 20 mins | Extra time: 20 mins, marinating1. Combine 1/2 cup olive oil, lemon juice, salt, pepper, and oregano in plastic resealable bag. Add chicken breasts, seal bag, and marinate chicken in refrigerator for 20 minutes.
2. Heat grill to High and lightly oil grill grate.
3. Remove chicken from marinade. Grill about 15 minutes, flipping every 5 minutes, until internal temperature reaches 165 degrees F or until no longer pink in the middle.
4. While chicken is grilling: in a skillet, cook onion and minced garlic in 1 tablespoon olive oil on medium-high heat for 2 minutes.
5. Add tomatoes and jalapeno. Lower heat to medium-low and simmer for 3 minutes. Remove from heat.
6. Serve each chicken breast with generous helping of hot sauce spooned on top.
