Griffin house onion artichoke frittata recipe details
- Ingredients
- 9 eggs, slightly beaten
- 1 cup half & half or milk
- 6 ounces feta cheese, crumbled or cut into 1/2-inch slices
- 8 ounces Swiss cheese, grated
- 1 pint cottage cheese
- 1/2 teaspoon nutmeg
- salt to taste
- 1 large onion, finely diced
- 1 Tablespoon prepared diced garlic or 3 cloves fresh garlic, pressed
- 1/3 cup melted butter or margarine
- 8 to 10 whole artichokes, cut into bite-sized pieces (these are not the ones packed in olive oil and spices, but are water-packed)
Preheat oven to 350 degrees. Mix all ingredients together except the onion, garlic, butter, and artichoke hearts. In a large skillet, saute onion and garlic in butter until translucent and limp, but not brown. Remove from heat; toss artichoke hearts to cover with melted butter. Add contents of skillet to egg and cheese mixture; mix well. Spray either one large (8 x 13 inches) baking dish or 12 smaller ramekins (if ramekins, fill about 3/4 full). If a single baking dish, bake 45 to 50 minutes until center is firm to the touch (not liquid and bubbly). Ramekins should be ready in about 25 to 30 minutes.
