|500 g||mushrooms, sliced|
|salt and pepper|
|125 ml||white wine|
|125 ml||single cream|
Rub the partridges inside and outside with salt and pepper. In a saucepan, heat the butter and oil and fry the partridges until browned all around.
Stir in the onions and the mushrooms and sauté for some minutes. Add the wine and the water, cover and simmer over low heat for 40 minutes. Add the cream and cook for some more minutes. Season to taste with salt and pepper.
