Earl grey cake recipe details
Ingredients
150 g | butter |
175 g | cane sugar |
250 g | flour |
½ tsp | baking powder |
250 ml | tea (Earl Grey), freshly brewed |
250 g | dried apricots |
1 | egg |
1 handful | walnuts, roughly chopped |
1 tsp | freshly grated lemon peel |
Instructions
In a saucepan, bring the tea with butter, sugar and apricots to a gentle boil and simmer for 5 minutes. Pour into a bowl and leave to cool.Preheat the oven to 180°C.
Stir the flour and baking powder into the tea mixture and add by and by the beaten egg, walnuts and lemon peel. Stir until well combined.
Pour the batter into a greased rectangular cake pan. Bake for 70 minutes.
After about 15 minutes in the oven, carve the cake slightly lengthwise.
Allow the cake to cool completely, then wrap with foil and leave for 1-2 days at a cool place.
Serve in slices.
