Green Linguine with Vegetables and Fish recipe

|500 g||pasta (green Linguine)|
|200 g||white fish fillets (or a piece of fresh tuna), diced|
|1||onion, cut in thin slices|
|3 clove(s)||garlic, chopped|
|1||red bell pepper, cut into slices|
|150 ml||whipping cream|
|freshly grated Parmesan cheese|
|salt and pepper|
Cook the linguine al dente.
Meanwhile fry the onion and garlic in a little oil until tender. Add the diced eggplant and the red pepper. Fry for 10 minutes until tender, season to taste with the spices and herbs. You might need to add some more oil. When the vegetable is cooked, take out of the pan and set aside.
In the same pan cook the diced fish, then return the vegetables and the whipping cream. Cook for 2 minutes and check seasoning. Now add the linguine and mix very well.
Serve with grated Parmesan cheese.
You can add mushrooms or zucchini to the sauce.
