Green beans with parsley sauce recipe details
Ingredients
1 kg | green beans, drained |
2 tbsp | butter |
2 tbsp | flour |
300 ml | chicken broth |
2 medium | eggs, yolks only |
120 ml | milk |
40 g | parsley, minced |
salt and pepper, to taste |
Instructions
Place beans in a large saucepan and cover with water and bring to a boil. Cook, uncovered, for 8-10 minutes or until tender.Parsley Sauce:
Melt butter in a large skillet over medium heat. Stir in the flour until smooth. Gradually whisk in broth and bring to a boil. Cook, whilst stirring for 1-2 minutes, until thickened. Remove from the heat.
In a small bowl, combine egg yolks and milk.
Stir a small amount of hot broth mixture into egg mixture and then combine all in the pan, stirring constantly.
Bring to a gentle boil and cook and stir for 2 minutes or until thickened. Finally stir in parsley.
To serve, drain beans and top with sauce.
