Ingredients

1 kg green beans, drained
2 tbsp butter
2 tbsp flour
300 ml chicken broth
2 medium eggs, yolks only
120 ml milk
40 g parsley, minced
salt and pepper, to taste

Instructions

Place beans in a large saucepan and cover with water and bring to a boil. Cook, uncovered, for 8-10 minutes or until tender.

Parsley Sauce:
Melt butter in a large skillet over medium heat. Stir in the flour until smooth. Gradually whisk in broth and bring to a boil. Cook, whilst stirring for 1-2 minutes, until thickened. Remove from the heat.

In a small bowl, combine egg yolks and milk.

Stir a small amount of hot broth mixture into egg mixture and then combine all in the pan, stirring constantly.

Bring to a gentle boil and cook and stir for 2 minutes or until thickened. Finally stir in parsley.

To serve, drain beans and top with sauce.
