Ingredients

300 g red cabbage, thinly sliced
25 g black olives, pitted and sliced
½  lemon, half sliced, juice of the other half
100 g cucumber, sliced
2 sprig(s) mint, chopped
2 sprig(s) oregano, chopped
50 g Feta cheese, crumbled
1 tbsp vinegar
1 tsp mustard
some salt and pepper
1 tbsp olive oil

Instructions

In a small bowl stir together the vinegar, lemon juice and mustard. Season with salt and pepper. Whisk in the oil until well combined, then stir in mint and oregano.

In a salad bowl combine the cabbage with cucumbers, olives and the Feta cheese. Pour over the dressing and mix gently. Garnish with the lemon slices.

Serve with toasted white bread.
