Greek red cabbage salad recipe details
Ingredients
300 g | red cabbage, thinly sliced |
25 g | black olives, pitted and sliced |
½ | lemon, half sliced, juice of the other half |
100 g | cucumber, sliced |
2 sprig(s) | mint, chopped |
2 sprig(s) | oregano, chopped |
50 g | Feta cheese, crumbled |
1 tbsp | vinegar |
1 tsp | mustard |
some | salt and pepper |
1 tbsp | olive oil |
Instructions
In a small bowl stir together the vinegar, lemon juice and mustard. Season with salt and pepper. Whisk in the oil until well combined, then stir in mint and oregano.In a salad bowl combine the cabbage with cucumbers, olives and the Feta cheese. Pour over the dressing and mix gently. Garnish with the lemon slices.
Serve with toasted white bread.
