Greek easter soup recipe details
Ingredients
1.2 kg | lean lamb |
5 tbsp | olive oil |
salt and pepper | |
2 bunch(es) | spring onions |
2 tbsp | fresh peppermint leaves |
2 l | beef stock |
½ handful | fresh parsley, chopped |
½ bunch(es) | dill, chopped |
8 | eggs |
4 | lemons, squeezed |
Instructions
Pat dry the meat and cut into small cubes. Heat oil in a large saucepan and sauté the meat, then season with salt and pepper.Dice the spring onions and chop the peppermint and add both to the meat. Pour the beef stock into the saucepan and bring the soup to a boil, then simmer over low heat for 45 minutes. Season to taste with salt and pepper.
Whisk the eggs with the lemon juice and some tablespoons of the broth. Gently stir the egg mixture into the soup and remove the pan from heat. The soup should not boil anymore. Stir in the parsley and dill. Check seasoning and correct, if necessary.
Serve with roasted pita bread.
