- Ingredients
- 1-1/2 cups flour
- 1 cup old-fashioned rolled oats
- 2 teaspoons baking powder
- 1-1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1-1/2 cups nonfat buttermilk
- 2 Tablespoons brown sugar or honey
- 1 egg (or egg substitute equal to 2 eggs)
- 4 Tablespoons oil
- 2 medium Granny Smith apples, grated
If you’re in a hurry, you can make pancakes for this batter without the 1-hour wait. For pancakes, reduce oil to 2 Tablespoons.
Mix flour, oats, baking powder, cinnamon, baking soda, salt, and nutmeg. Add vanilla, buttermilk, brown sugar or honey, egg (or egg substitute), and oil. Mix all together by hand, using as few strokes as possible, then gently fold in the grated apple. The batter should be thick. Let batter sit for 1 hour before using.
Bake in a preheated waffle iron until done. Especially good topped with home-made chunky applesauce, warmed in the winter, or fresh strawberries in the summer.
Makes: 10 to 12 pancakes or 4 to 6 waffles.
