Granny glyn's lemon bread details
- Ingredients
- 4 cups granulated sugar
- 4 sticks margarine
- 8 eggs
- 4 large lemons
- 6 cups all-purpose flour
- 2 teaspoons salt
- 4 teaspoons baking powder
- 2 cups milk
- 4 teaspoons lemon extract
- 2 cups chopped nuts (optional)
- 2 additional cups of sugar
Set oven to 350 degrees. Grease and flour 3 large loaf pans. Beat together the sugar and margarine, add the eggs, and beat well. Zest the 4 lemons, reserving the fruit. Stir the zest into a mixture. Stir in milk, lemon extract, and nuts.
Pour mixture evenly into the loaf pans and bake 45 to 60 minutes or until a straw comes out clean. While the loaves are baking, juice the four lemons and add the juice to the 2 cups of sugar, stirring until the sugar is dissolved. Upon removing the loaves from the oven, puncture each loaf 30 or 40 times with a straw and pour the lemon-sugar mixture over the loaves.
