An easy to make homemade vegetable soup. The longer it simmers, the better it tastes. Freeze leftovers and the taste quality only improves. All the ingredient measurements should be adjusted to your taste.

Ingredients
Serves: 10
- 2 pounds beef roast (any cut will do)
- 3 stalks celery chopped
- 1 onion chopped
- 1 or 2 beef bouillon cubes
- 1 (46 ounce) can tomato or vegetable juice
- 1 large can whole peeled tomatoes
- 2 pounds potatos peeled and chopped
- 2 pounds carrots peeled and sliced
- 1 pound pkg frozen peas
- 1 pound pkg frozen corn
- 1 pound pkg frozen cut green beans
- salt and pepper to taste
Preparation method
Prep: 30 mins | Cook: 5 hours
1. Place roast, celery, onion, and bouillon in large pot and enough water to cover. Cover and cook approx 2 hours or until meat is falling apart. Or can be easily pulled apart with a fork.
2. Add all the remaining ingredients. Let simmer approx 3 hours or until the potatoes and carrots are tender and the aroma overcomes you and you can’t wait any longer.
