Grand and glorious cranberry coffee cake recipe details
- Ingredients
- 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups flour
- 1 cup yogurt
- 1 teaspoon almond extract
- One 16-ounce can whole cranberry sauce
- Glaze
- 1 cup powdered sugar
- 3 teaspoons warm water
- 2 teaspoons almond extract
Cream together margarine and sugar. Add eggs. In a separate bowl, combine baking powder, soda, salt, and flour. Add to creamed mixture alternately with 1 cup yogurt. Add 1 teaspoon almond extract. Pour 1/2 of batter into a bundt pan sprayed with non-stick cooking spray. Spread 1/2 of cranberry sauce evenly over batter. Pour in remaining batter and top with the rest of the cranberry sauce.
Glaze: Mix ingredients and pour over warm cake after removing it from the pan.
