Ingredients

For the crumbles:
125 g sugar
125 g cold butter
1 pack(s) vanilla sugar
125 g flour
For the dough:
125 g sugar
2 medium eggs
200 g flour
3 tbsp cornflour
2 tsp baking powder
milk
125 g soft butter
1 kg gooseberries

Instructions

Mix all ingredients for the crumbles in a bowl and knead with your fingertips until crumbly. Place into the fridge.

Preheat the oven to 200°C. Set aside 300g of the gooseberries.

In a large bowl, cream the butter with the sugar. Whisk in the eggs, one at a time. Sieve in flour, cornflour and baking powder and stir until well combined, adding sufficient milk to get a soft dough. Fold in the remaining gooseberries.

Transfer the dough into a buttered and floured spring form tin and divide the remaining gooseberries and the crumbles on top. Bake for 30-40 minutes.
