Ingredients
For the crumbles: | |
125 g | sugar |
125 g | cold butter |
1 pack(s) | vanilla sugar |
125 g | flour |
For the dough: | |
125 g | sugar |
2 medium | eggs |
200 g | flour |
3 tbsp | cornflour |
2 tsp | baking powder |
milk | |
125 g | soft butter |
1 kg | gooseberries |
Instructions
Mix all ingredients for the crumbles in a bowl and knead with your fingertips until crumbly. Place into the fridge.Preheat the oven to 200°C. Set aside 300g of the gooseberries.
In a large bowl, cream the butter with the sugar. Whisk in the eggs, one at a time. Sieve in flour, cornflour and baking powder and stir until well combined, adding sufficient milk to get a soft dough. Fold in the remaining gooseberries.
Transfer the dough into a buttered and floured spring form tin and divide the remaining gooseberries and the crumbles on top. Bake for 30-40 minutes.
