Gnocchi with Butter Sauce recipe

Ingredients
1 kg | gnocchi |
250 g | shallots, sliced |
20 leaves | sage, sliced |
4 tbsp | butter |
4 tbsp | olive oil |
8 tbsp | pine nuts |
¼ l | vegetable stock |
6 tbsp | freshly grated Parmesan cheese |
salt and pepper |
Instructions
Cook the gnocchi in salted water for 5-10 minutes or until done.
In a saucepan melt the butter and heat the oil. Add the pine nuts. Roast the pine nuts until golden. Stir in the shallots and sauté until golden. Add the sage and cook for another 3-4 minutes. Pour in the stock and bring to a boil. Season to taste with salt and pepper.
To serve, divide the gnocchi on preheated plates. Pour over the butter sauce and sprinkle with Parmesan cheese.
