Gnocchi Salad with Vegetables recipe
Ingredients
325 g | gnocchi |
1 | onion, chopped |
1 | red bell pepper, diced |
1 | courgette, diced |
2 tbsp | olive oil |
salt and pepper | |
For the dressing: | |
1 clove(s) | garlic, minced |
1 tbsp | white wine vinegar |
2 tbsp | olive oil |
2 tbsp | tomato puree |
3 tbsp | vegetable stock |
10 leaves | basil |
salt and pepper |
Instructions
Cook the gnocchi in salted water until done.
In a saucepan, heat the oil. Add the bell pepper, courgette and the onion. Fry over low heat for some minutes or until the vegetables are done, but still firm to the bite. Season to taste with salt and pepper.
Mix the garlic, vinegar, oil, tomato purée and vegetable stock until well combined. Season with salt and pepper.
In a serving bowl, mix together the gnocchi, vegetables, basil leaves and the dressing.
Serve lukewarm or cold.
