Ingredients

180 g flour
pinch(es) salt
1 tsp baking powder
90 g suet, shredded
1  egg, beaten
milk, a little
lard for frying

Instructions

In a bowl mix together the flour, salt and baking powder then rub in the suet. Knead in the egg and sufficient milk to get a firm dough. On a lightly floured surface roll out the dough to 1.5cm thick. With a 5cm cutter cut out 12 rounds.

In a skillet melt a little lard and bake the cakes until golden brown on both sides. Drain on kitchen paper.

Serve with warmed golden syrup or lemon curd.
