Gingered vegetables recipe details
Ingredients
2 medium | parsnips |
4 medium | carrots |
50 g | butter |
1 piece(s) | fresh ginger, about 1½-1¾ inches or 4cm in length |
fresh nutmeg, grated | |
1 tbsp | fresh parsley, chopped |
2 tbsp | caster sugar |
1 large | lemon, juice only |
Instructions
Wash and peel the vegetables and slice them thickly.Melt the butter in a large pan over low heat and gently sauté the vegetable pieces for 4 minutes. Peel the ginger and grate it into the pan. Add a good grating of nutmeg and the lemon juice and just enough water to cover.
Cover with a well-fitting lid and simmer for 20 minutes. The vegetables should be tender the liquid almost evaporated. Increase the heat slightly and spoon in the sugar, stirring and tossing the vegetables until glossy.
Serve with a sprinkling of fresh parsley and season to taste.
