Gingered Melon with Coconut recipe

Ingredients
600 g | melon: watermelon, cantaloupe, honeydew |
80 g | shredded coconut |
180 ml | water |
90 g | granulated sugar |
4 tsp | lemon juice |
3 tsp | fresh ginger, chopped |
2 tsp | grated lemon zest |
Instructions
Combine water, sugar, lemon juice, and ginger in a saucepan over medium heat. Bring to a quick boil and then reduce heat to low. Cook, uncovered, for 5 minutes. Remove from heat and stir in grated lemon zest. Let cool to room temperature.Strain off and discard the ginger and grated lemon zest.
Prepare melons. Cut into small chunks and place in a bowl. Pour approximately 3/4 of the ginger syrup over the melon, stirring gently to coat. Cover and refrigerate for 2 hours.
To serve, spoon melon balls into individual dessert dishes and sprinkle with coconut.
