Gil's blueberry muffins recipe details
- Ingredients
- 1-1/4 cups all-purpose flour
- 3/4 cup oat bran
- 5/8 cup sugar
- 2 teaspoons baking powder
- 1 Tablespoon olive oil
- 2 Tablespoons non-fat yogurt
- 3 egg whites
- 3/4 cup skim milk
- 1 cup blueberries
- 3/4 cup chopped nuts (optional)
- Sugar/cinnamon mixture (optional)
Heat oven to 400 degrees. Prepare 12 baking cups by spraying with vegetable shortening spray. In a large bowl, mix flour, oat bran, sugar, and baking powder. In a separate bowl, beat egg whites, olive oil, and yogurt. Mix in milk. Stir dry mixture into liquid mixture. Gently stir blueberries and nuts into batter. After placing batter in baking cups, sprinkle batter with cinnamon/sugar mixture. Bake 20 minute, or until golden brown.
