Ingredients
1 | chicken, ready to cook |
1 | organic lemon |
8 clove(s) | garlic, 4 crushed, 4 bashed once and still mostly intact |
1 large | onion, sliced |

Instructions
Divide the onions in a greased roasting tin.Halve the lemon, squeeze out the juice and keep the halves. Mix the lemon juice with oil, salt, pepper and the crushed garlic. Rub the chicken inside and outside with the mixture and tuck the remaining garlic and the lemon halves into the cavity of the chicken.
Place the chicken into the roasting tin. Drizzle with oil. Cover and cook in the preheated oven at 220°C for 30 minutes. Remove the lid and baste the bird with the gravy. Roast for another 35-45 minutes until the chicken is golden brown and crispy and cooked through.
Carve the chicken and serve with fresh white bread to mop up the aromatic gravy, together with green salad of your choice.
