Garlic and saffron soup recipe details
Ingredients
5 tbsp | olive oil |
120 g | bread cubes |
4 large | garlic, minced |
90 ml | dry white wine |
900 ml | vegetable broth |
2 | saffron threads |
Instructions
Heat oil in a heavy large skillet over medium heat. Add bread cubes and garlic and sauté until bread is light golden, about 4 minutes.Add wine, the broth and saffron; bring to boil.
Reduce heat, cover and simmer for 25 minutes. Puree soup in blender and return soup to saucepan.
Preheat oven to 180°C.
Arrange French bread slices on cookie sheet and brush with remaining 1 tablespoon oil. Bake until lightly toasted, about 8 minutes. Place some croutons in each bowl. and ladle warm soup over croutons.
