Garlic and potato soup recipe details
Ingredients
4 clove(s) | garlic, minced |
700 ml | chicken broth |
1 tbsp | butter, unsalted |
1 pinch(es) | dried sage |
salt and pepper, to taste | |
500 g | potatoes, peeled, diced |
1 tsp | cumin |
2 medium | eggs, yolks only |
40 g | Cheddar cheese, grated |
Instructions
Combine broth, sage, garlic and butter into a soup pot and simmer for about 15 minutes. Add a little salt and pepper and the potatoes. Cook until the potatoes are very tender.Beat egg yolks in a small bowl and add a large ladle of the hot broth to the bowl. Whisk well and pour back into the simmering soup. Do not boil.
Blend until broth thickens slightly and remove from heat. Serve in bowls and sprinkle cheese on top.
